Mashed potatoes au gratin makes for a show-stopping side dish

Everyone loves mashed potatoes. And everyone loves potatoes au gratin. So who wouldn’t love mashed potatoes au gratin?

Jessica Holmes, the host of “California Cooking” at Nexstar’s KTLA, began experimenting with the recipe after seeing a similar idea trending on social media a few years back. 

“I thought, ‘Oh my gosh, that looks like the best thing,'” Holmes explained. “Basically, you make your mashed potatoes, and then on top, you put this layer of cheesy potatoes and then it bakes.” 

The dish is also a feast for the eyes, making it a stunning side next to a steak, a roasted chicken or a seared salmon.

Mashed Potatoes Au Gratin

Yield: About 6 servings. Cook time: 1 hour 30 minutes

Ingredients

  • 8 Yukon gold potatoes
  • 1 stick (8 Tablespoons) butter, plus another 4 Tablespoons, softened
  • 1 cup heavy cream
  • 2 cloves garlic, chopped
  • 1/2 cup freshly grated Parmesan cheese, plus additional for sprinkling
  • 1 cup cheddar cheese (sharp or mild), shredded
  • Salt and pepper
  • Chopped scallions, for garnish

Instructions

  • Preheat the oven to 400 degrees f.
  • Peel the potatoes. Cut 6 into chunks and add to a pot of salted boiling water. Cook until tender; between 8 to 12 minutes. Potatoes should be done when you’re able to pierce a chunk with a knife with little resistance.
  • Begin melting 1 stick of butter in a saucepan. Gently warm up the heavy cream in another small saucepan.
  • While the potatoes are cooking, cut the 2 remaining potatoes into thin slices. Add potato slices into a bowl with chopped garlic, 2 tablespoons butter, salt, pepper and parmesan cheese. Stir to combine.
  • When potatoes are done boiling, remove and strain in a colander. 
  • Using a standing mixer, whip together potatoes, 1 cup of warmed heavy cream, 2 tablespoons butter and salt. Add the shredded cheddar to potatoes and mix together.
  • Transfer mashed potatoes to a baking dish and layer the sliced potatoes on top. Cover with parchment paper and foil and bake, covered, for 20 minutes at 400 degrees F.
  • Remove after 20 minutes, uncover, and add more parmesan cheese to the top. Bake for another 35 more minutes, or until potatoes are browned.
  • When browned, remove from the oven. Garnish with chopped scallion and serve.
