Cabbage’s reputation has flipped on its head. It’s gone from a stinky “poor man’s food” to a shining star in fine-dining restaurants and a growing social media food trend.
In 2024, Eater reported on the cabbage boom in the San Francisco dining scene, noting fine-dining restaurants were serving cabbage charred, stuffed or confited. In 2025, Tiktok creator @bigpapahannah made waves with her viral cabbage boil video (the original creator, @by.nay.a., first posted about it in 2024). And since then, many cabbage food trends have arisen, including melting cabbage, cabbage Caesar salad and cabbage noodles.
In December, Pinterest predicted that the motto for 2026 would be “live, laugh, leaf” and that cabbage would be “the new kitchen MVP.” And Pinterest’s predictions are proving to be correct, fueled by the fibermaxxing movement, cabbage’s low cost and its versatility.

Preheat oven to 385 degrees F.

Use a serrated knife to cut the stem off the cabbage. Remove some of the outside layers of the cabbage. Use a sharp knife to carefully cut the core out of the cabbage. Poke some holes into the cabbage to allow the seasonings and butter to penetrate. Dry the cabbage with a paper towel.

Coat the cabbage with olive oil. Season with salt, Tony’s seasoning, lemon pepper seasoning, Old Bay seasoning, onion powder, garlic powder, paprika and chicken bouillon.

Preheat oven to 350 degrees F. Slice cabbage in half through the stem end. Cut each half into 4 wedges, keeping the stem and core intact. Heat 1 tbsp oil in a large cast-iron or other heavy ovenproof skillet over medium-high heat. Add 4 cabbage wedges; cook until deeply browned on both sides, about 5 minutes per side. Transfer to a plate; sprinkle both sides evenly with ¼ tsp salt and ¼ tsp pepper. Repeat with remaining wedges.

Position oven racks in top third and lower third; preheat to 425°F. Toss cabbage with 2 tablespoons oil and salt in a large bowl until well coated. Spread in an even layer on 2 large rimmed baking sheets.

Melt 4 tablespoons butter in a skillet and add shallot and cook until soft. Add garlic and cook until fragrant, about 15 seconds. Add shredded cabbage and salt.
