Too hot to fire up the grill? No worries. Dean Richards, the entertainment reporter at Nexstar’s WGN, has a shortcut recipe for BBQ chicken sliders that’s can be made in the comfort of your own (hopefully air conditioned) kitchen.

Dean’s recipe calls for just a handful of easy-to-find ingredients along with some pre-cooked chicken. And if you don’t have any of that in the fridge, there’s no shame in picking one up at the supermarket.

“You can take a chicken and roast it yourself, if you want to. Or, what I did, I went to the grocery store and bought me one of those great rotisserie chickens,” Dean said.

All that’s left to do is caramelize some onions and toast up some slider buns for a treat the whole family can’t wait to try.

BBQ Chicken Sliders with Caramelized Onions

  1. Preheat oven to 350 degrees F. Place slider buns, halved, on a baking sheet lightly coated with cooking spray and brown to your liking on both sides.

    Tip TIP: If using a grill, preheat grill to 350F and then grill buns over indirect heat until toasted.

  2. Saute the onions in a large pan over medium heat until caramelized. Stir frequently to keep from burning.

    Tip TIP: About 15 minutes for lighter caramelization; as much as 30 minutes for darker caramelization.

  3. Once onions are sufficiently browned, add the shredded chicken and BBQ sauce to the pan. Turn heat to low and mix until completely coated and heated through.
  4. Spread the chicken/onion mixture equally across the bottom half of the toasted buns. Top with more BBQ sauce, if desired.
  5. Sprinkle with the grated Swiss cheese and chopped cilantro or parsley, if using.
  6. Place the top buns on the sliders. Serve immediately, or, for deeper flavor, cover with foil and bake for 7 minutes.
