These foil packet chicken wings are perfect for tailgating.
Seasoned simply with garlic powder, sea salt and black pepper, these wings are super versatile and can be marinated in all sorts of sauces, including hot sauce, barbecue sauce, Thai sweet chili sauce or even a Greek-style marinade.
Chef Dean Richards recommends Frank’s Red Hot Sauce, Famous Dave’s Sweet Barbecue and Zesty Barbecue Sauce, Mae Ploy Sweet Chili Sauce and Ken’s Steak House Simply Vinaigrette Salad Dressing. We’ve included a recipe for Greek-style marinade, if you’d like to make your own.
These grilled chicken wings pair beautifully with grilled watermelon. Mix together honey and lime juice, drizzle over the watermelon, sprinkle over some fresh mint, and if you’d like, add some crumbled feta cheese.

Place the wings in a large bowl (or Ziploc bag) and season all over with salt, pepper and garlic powder.

In a separate bowl, pour your sauce of choice, such as barbecue sauce, Thai sweet chili sauce or a Greek-style marinade. Follow the instructions below to make your own Greek-style marinade.

Pour about ¾ of this mixture over the wings and toss to coat. Save the remaining marinade for after grilling.

Cover the chicken/sauce mixture bowl with plastic wrap (or put it all in a Ziploc bag) and marinate for 1–2 hours.

Divide the wings between two 16-inch sheets of heavy-duty foil to create foil packets.

Discard excess marinade and place wings in the center of each foil sheet. Wrap and seal the foil packets tightly on the long and short ends.

Heat your grill to high heat, place both foil packets on the grill, and grill for a total of 20–25 minutes, turning once midway.

Be careful opening the packet. It will be very hot inside.

Before serving, stir the remainder of the sauce of choice over the wings.
Greek-Style Marinade (optional)

Combine lemon juice, oregano, minced garlic, salt, pepper and olive oil in a bowl.

Whisk until well blended and use as marinade or sauce.
