For this recipe, you can use fresh or thawed frozen strawberries, and Richards recommends using Fage plain nonfat Greek yogurt. Simply layer Graham cracker crumbs; a mixture of yogurt, cream cheese, vanilla and powdered sugar; and sweetened strawberries in any glass of your choice. If desired, top with chopped pecans.

Because the recipe is made with Greek yogurt, it’s lighter than traditional cheesecake. And since it’s no-bake, the dessert comes together in a snap.

No-Bake Cheesecake Parfaits

  1. In a small bowl, mix the diced strawberries and a teaspoon of sugar, and place in the fridge to macerate and chill.
  2. Place the graham crackers into a food processor and pulse until ground into fine crumbs, or crush with a rolling pin if you don’t have a processor.
  3. Combine the graham cracker crumbs and melted butter in a bowl and stir until the crumbs are moistened. Set aside.
  4. In the bowl of a stand mixer, beat the room temperature cream cheese for several minutes until fluffy. Add the Greek yogurt, vanilla and powdered sugar and beat on medium speed until smooth and creamy.
  5. To assemble the cheesecake parfaits, place a few spoonfuls of the cheesecake mixture into the bottom of a glass.
  6. Add a layer of graham cracker crumbs on top of the cheesecake mixture.
  7. Top with a layer of macerated strawberries, leaving the excess liquid behind, then repeat with one more of each layer.
  8. Chill the parfaits for about an hour in the refrigerator before serving.
