If you’re trying to eat more salad but are craving tacos, try this taco-inspired salad, topped with crushed Doritos for extra crunch and a cheesy flavor.

Start by cooking ground beef with a diced onion, seasoning with a packet of taco seasoning mix. Then combine the ground beef mixture with black beans, crushed Doritos, romaine lettuce, diced tomatoes, shredded cheese and salad dressing. Catalina dressing adds a sweet and tangy flavor to the salad.

As always, you can personalize this recipe with your tastes. Don’t like Doritos? Use tortilla or corn chips. Don’t like spicy? Use mild taco seasoning instead.

  1. Cook the ground beef, diced onion, salt and pepper in a nonstick skillet over medium to medium-high heat until the beef is no longer pink and the onions are tender, about 10 minutes.

    Tip TIP: Ground turkey or chicken may be substituted for the beef.

  2. Add the water and taco seasoning and stir until the meat is evenly coated.

    Tip TIP: Use mild taco seasoning for a less spicy version.

  3. Simmer for several minutes, then remove from the heat and allow the mixture to cool slightly.
  4. In a large bowl, combine the black beans, crushed Doritos, romaine lettuce, tomatoes, cheddar cheese and Catalina dressing.

  5. Add the cooled taco meat mixture and toss to combine.
