This simple pumpkin chicken chili is the perfect fall dish with plenty of protein.

Garnishing the chili with plain Greek yogurt is a healthier and protein-packed alternative to traditional sour cream. Serve this chili with Frito chips, cornbread or sourdough.

Heat olive oil in a pot. Add onion and bell peppers, and cook until soft.

Stir in chili powder, chicken, pumpkin, beans and broth.

Simmer for 8-10 minutes. Let it gently bubble until warm and slightly thickened.

Spoon into bowls. You can add plain Greek yogurt and top with pumpkin seeds for color and crunch.
