Find dumpling wrappers in the produce or frozen food section of most grocery stores. This recipe doesn’t require pleating or sealing the dumplings. Simple wrap a meatball filling with a dumpling wrapper and sear it meat-side down in a pan before steaming.

Place ground chicken, garlic, ginger, onion, water chestnuts, sesame oil, rice vinegar, soy sauce, Sriracha, hoisin sauce, salt and pepper in a bowl and mix well.

Roll mixtures into small balls about 1-inch in diameter.

Place a dumpling wrapper over each meatball. Crimp it down around the ball a little.

In a 12-inch pan, heat oil on a medium heat. Add in dumplings, meat-side down. Cook for 1 minute.

Add water, then cover and cook for 5–7 minutes, or until the ground meat is cooked.
TIP: The dumpling meat should be thoroughly cooked. The dumpling wrapper will be crispy on one side and soft on the other.

Serve topped with soy sauce, chili oil and green onions.
