Peach Thyme Pound Cake

  1. Preheat oven to 350 degrees F. Spray a 12-cup bundt pan with nonstick baking spray.
  2. In a medium bowl, whisk together the flour, baking soda and salt.
  3. In the bowl of a stand mixer, cream the butter until it is pale yellow.
  4. Add the sugar and continue beating until thoroughly mixed.
  5. Add the eggs, one at a time, beating well after each addition.
  6. Add the almond extract.
  7. Add the flour mixture, 1 cup at a time, alternating with the sour cream.
  8. Fold in the thyme and peaches.
  9. Pour batter into prepared pan and bake for 1 hour and 15 minutes, until a cake tester inserted into the center comes out clean.
  10. Let cake cool for 15 minutes in the pan; then invert onto a wire rack and let cool completely.
  11. Dust with confectioners’ sugar, if desired.
