To make the Southwest chicken, you can use use boneless, skinless chicken breast or thighs. Make sure to pound out the chicken thin so that it cooks faster, ideally between two sheets of plastic wrap to keep your cutting board clean. Season one side, and place the chicken seasoned-side down in a hot skillet. Season the remaining side as the chicken cooks.
