The process is simple but should be made a day in advance. First, tear apart a loaf of French bread or crusty Italian bread. Soak the bread in a custard overnight in the refrigerator before baking the next morning.
Vegan Vicki recommends serving the French toast casserole with homemade chipotle syrup, which has the perfect balance of sweetness and smokiness. To make the chipotle syrup, mix equal amounts of brown sugar and water in a small saucepan until the sugar dissolves. Add vanilla and 1 teaspoon of chipotle sauce from chipotle peppers in adobo. Cook the mixture until it becomes thick.

Pull the bread apart into bite size pieces. Lightly grease a 9×13 inch casserole dish, and add the bread to it.

In a bowl add the non dairy milk, cane sugar, flaxseed, cornstarch, cinnamon, vanilla and salt. Mix until combined.

Pour the custard over the bread. Press the bread down into the custard until completely soaked.

Cover and place in the refrigerator for about 8 hours or overnight.

In the morning, preheat the oven to 350 degrees.

In a small bowl, combine the brown sugar, flour and cinnamon. Add the vegan butter using a fork or your fingers. Sprinkle this mixture on top of the casserole.

Bake the casserole uncovered for 45–50 minutes until golden brown with a caramel crumble top.

Slice and add powdered sugar or your favorite syrup.
