If you’re craving melt-in-your-mouth, buttery shortbread cookies but don’t want all the carbs and sugar, try this gluten-free, low carb and zero sugar recipe.
Traditional shortbread cookies are made with flour, butter, sugar and salt and pack about 100 calories, 11 grams of carbs and 3 grams of sugar per finger. This version has 2 grams net carbs and 7 grams of protein per finger – that’s about the same protein as an egg!

The recipe for these healthier shortbread cookies is inspired by Carolyn Ketchum’s recipe and modified by Grace Mobley. It replaces the white flour with almond flour, creating a shortbread that’s higher protein, full of healthy fats and has no carbs, and replaces the white sugar for erythritol and stevia.

Preheat oven to 300°F.

Combine almond flour, erythritol, stevia and salt in a large bowl; stir to mix well.

Cut butter into small pieces and add to mixture along with vanilla extract.

Blend with immersion blender, electric hand mixer or food processor until mixture forms a coarse crumble and starts to stick together.

Press dough into an 8×8 pan lined with parchment paper to about ⅓-inch thickness.

Score lightly with a knife to create lines for cutting after baking.
TIP: Grace Mobley suggests two lines down the center and five across for about 24 fingers.

Bake for 20–25 minutes until edges start to become golden.

Remove from oven and cool completely. Slice into fingers using scored lines.

Store extras in an airtight container for up to one week or freeze for longer storage.
