Entering any competition at a fair can be an intimidating experience.

Your hard work is being put to the test and judged by strangers, each of whom comes to the table with a discerning eye.

It was 2007 when CBS 17 anchor Bill Young took the challenge by entering the “Boot Scootin Guacamole Contest” at the Heart of Texas Fair and Rodeo in Texas.

Going up against dozens of other entries, Bill was able to come away with a third-place ribbon.

He is now sharing that award-winning recipe with the good folks of central North Carolina.

Ingredients

Yields: 6 servings

Jalapeno Guacamole

4 large avocados
½ red onion
2 tomatoes, seeded and diced (optional)
¾-1 cup cilantro
3-5 diced jalapenos, , based on desired spice
2 garlic cloves, minced
¼ tsp black pepper
¼-½ tsp red pepper flakes

Directions

Jalapeno Guacamole

Smash the avocados and slowly blend the ingredients.
TIP: For less spice, soak jalapenos in ice water before using.
Top with added diced jalapenos if desired.
