Chef Jason Silva from Trinity Brewhouse in Providence, Rhode Island, shares his recipe for sesame tuna bowls. It’s a light and tasty option perfect for warm summer weather.

This recipe is a take on a poke bowl, using sesame-seared tuna instead of raw. The tuna is seasoned simply with soy sauce (or tamari if gluten-free) and black and white sesame seeds. Prepare a simple jalapeno slaw with cabbage, carrot, jalapeno, cilantro, soy sauce, rice wine vinegar and lime juice.

To build the bowl, start with a bed of white rice and top with the seared tuna, jalapeno slaw, seaweed salad, pickled ginger and edamame. Silva recommends serving the bowl with volcano sauce or spicy mayo.

Jalapeno Slaw

  1. Remove the seeds from the jalapenos and slice them into thin strips.
  2. Combine jalapenos, shredded carrot, cilantro and cabbage in a bowl.
  3. In a separate bowl, whisk together 2 tablespoons soy sauce, rice wine vinegar and lime juice.
  4. Pour the dressing over the vegetables and toss to coat. Refrigerate until ready to use.

    Tip TIP: Chilling helps the flavors develop.

Sesame Seared Tuna

  1. Pat the tuna dry with paper towels and coat both sides with the remaining soy sauce.
  2. Mix the white and black sesame seeds together and press them onto all sides of the tuna.
  3. Heat a lightly oiled cast-iron skillet or stainless-steel pan.
  4. Sear the tuna for 1 minute 30 seconds per side.

    Tip TIP: Avoid overcooking to keep the center tender.

  5. Let the tuna cool for 3–5 minutes, then slice thinly.

  1. Divide the cooked white rice between serving bowls.
  2. Arrange sliced sesame-seared tuna, jalapeno slaw, edamame, pickled ginger and wakame seaweed salad over the rice.
  3. Garnish with scallions and serve.

    Tip TIP: Serve with volcano sauce or spicy mayo if desired.
