For an easy weeknight meal that’s ready in less than half an hour, try these sheet pan shrimp fajitas.

Simply toss sliced vegetables with olive oil and seasoning and lay out on a sheet tray. Repeat the process with peeled and deveined shrimp, using a separate sheet tray so the shrimp doesn’t overcook. Alternatively, use one sheet tray and cook the vegetables on one side first before adding the shrimp to the other side to continue cooking.

Serve the shrimp fajitas on warmed tortillas with cheese, sour cream, tomatoes and sauce.

Sheet Pan Shrimp Fajitas

  1. Preheat the oven to 425°F and lightly oil a baking sheet.
  2. Arrange the bell peppers, jalapeno, onion and garlic in a single layer on the baking sheet.
  3. Toss the vegetables with 2 tablespoons olive oil and 1 tablespoon fajita seasoning.

    Tip TIP: Coat the vegetables evenly for the best flavor.

  4. Bake for 10 minutes until the vegetables begin to soften.
  5. In a large bowl, toss the shrimp with the remaining 1 tablespoon olive oil and 1 tablespoon fajita seasoning.
  6. Move the vegetables to one side of the baking sheet and arrange the shrimp in a single layer on the other side.

    Tip TIP: Alternatively, use a separate baking sheet to prevent overcooking the shrimp.

  7. Return to the oven and bake for 6 to 8 minutes until the shrimp are pink, firm and cooked through.

    Tip TIP: Do not overcook the shrimp.

  8. Stir in the cilantro and lime juice.
  9. Serve the shrimp and vegetables in warmed tortillas.

    Tip TIP: Top with cheese, sour cream, tomatoes or your favorite sauce if desired.
