Vegetables don’t have to be boring: Chef Lisa Heidelberg shows how to make a delicious, Greek-inspired whole-roasted cauliflower with feta and honey.

“I am going to take vegetables to another level,” she said. “Usually, they’re the supporting cast, but today they’re the star of the show.”

Inspired by chef Diane Kochilas, this recipe stuffs a whole head of cauliflower with garlic before coating with a sweet and tangy marinade, baking until golden brown, and topping with feta and parsley. Heidelberg notes that the leaves on the cauliflower are edible and can be stewed down like collard greens, chard or kale.

For a little extra kick, swap traditional Dijon for a hot or spicy mustard. The heat pairs beautifully with the sweet honey and salty feta. You can also add crushed red pepper flakes, smoky paprika or a drizzle of hot honey for an even bolder flavor profile.

This whole-roasted cauliflower pairs beautifully with salmon or chicken or over a bed of couscous.

  1. Preheat oven to 450°F.
  2. Trim leaves and stem so the cauliflower sits flat, then insert sliced garlic between florets.

    Tip TIP: Press garlic deep into the florets for more flavor distribution.

  3. Whisk olive oil, Dijon mustard, honey, balsamic vinegar, salt and pepper until combined.
  4. Brush the marinade generously over the cauliflower, making sure to coat all crevices.
  5. Place cauliflower in a baking dish and roast uncovered for 50–60 minutes until golden brown and tender.

    Tip TIP: Baste occasionally for deeper flavor.

  6. Mix feta and parsley, then press onto the top of the roasted cauliflower and return to oven for 5 minutes.
  7. Transfer to a serving platter, garnish if desired and serve warm.

    Tip TIP: Serve with lemon wedges or extra drizzle of olive oil for added brightness.
