A tasty twist on bacon cheddar jalapeno sliders

These aren’t your average bacon cheddar jalapeno sliders. Nick Rabar from Avenue N and Honeybird shows how to make sliders with a twist – instead of topping the burger patty with bacon, cheddar and jalapeno, mix them in!

Start by chopping cheddar cheese, jalapenos and bacon before mixing them into ground beef and forming into patties.

“That is going to add a ton of flavor to it,” Rabar said. “The bacon flavor, as it renders and steams and sears inside, it’s really going to add the bacon flavor to the meat, the cheese is going to melt on the inside, the jalapeno is going to add just a bit of spice and caramelize for all of it that’s on the crust.”

While the patties cook, the cheese may render out of the patty and stick to the pan a bit. Don’t worry – this will result in deliciously caramelized cheese.

“When you go out to the grill, you don’t have to bring all these different things,” Rabar said. “They’re in the burger, and they’re ready to go.”

Once the patty is cooked, top with more cheddar cheese and a burger bun. Placing the top bun on the patty as it cooks allows the bun to steam. While buns are fully cooked, room temperature buns can get hard. Rabar recommends Martin’s Potato Rolls for best results.

“You’re not talking about a standard burger,” he said. “You’re talking about something that has a little bit of texture. You’re talking about something that has caramelization.”

Add lettuce, tomato and pickles onto the bottom bun before topping with the patty. Rabar recommends seasoning sliced tomatoes with salt and pepper.

  1. Combine the ground beef, jalapeño, grated cheddar cheese, chopped cooked bacon, kosher salt and black pepper in a bowl.

    Tip TIP: Mix gently to avoid overworking the meat.

  2. Form the mixture into slider-sized patties.
  3. Cook the sliders over medium heat until done to your desired doneness.

    Tip TIP: Rendered cheese on the cooking surface will caramelize and add extra flavor.

  4. Top each slider with a slice of cheddar cheese during the final stage of cooking.

    Tip TIP: Place the top bun on the patty while cooking to lightly steam the bun.

  5. Spread chipotle mayonnaise on the buns and assemble the sliders.
  6. Serve on slider buns with optional lettuce, tomato and pickles.

    Tip TIP: Season tomato slices with salt and pepper before assembling.
