It’s apple season, and Jessica Holmes can’t let it go without a couple of recipes.

While many apple dishes are on the sweet side, this time she opted for a savory meal using apple cider.

“It’s kind of like a braised short rib, but with an apple cider sauce,” she said. “I love going to farmers’ markets or apple picking for picking up cider because it’s only around for a short time every year.”

With the cider’s sugar content, it’s perfect for browning things you’re cooking. It won’t make the recipe sweet, but adds “a little something,” Holmes said.

While she used boneless short ribs for this recipe, you’re welcome to use bone-in.

Once cooked, place it on top of some mashed potatoes for the perfect cozy Sunday fall meal.

Directions

Apple Cider Braised Short Ribs

  1. Cut bacon into small pieces and onion into slices.
  2. Season short ribs with salt and pepper, coat with flour.
  3. Add 1 tbsp butter to heavy pot, cook bacon until crisp. Remove bacon, leave grease.
  4. Brown short ribs on each side, remove.
  5. Add onions to pot, cook until softened. Add garlic, salt, apple cider, beef stock, and splash of vinegar.
  6. Return short ribs to pot. Cover and braise in oven at 350°F for 3 hours or until meat falls apart.

Mashed Potatoes

  1. Peel and cube potatoes. Boil in heavily salted water until tender.
  2. Simmer heavy cream and 2 tbsp butter in saucepan.
  3. Combine potatoes, cream mixture, and splash of beef stock in mixer. Blend until smooth.

Assembly

  1. Serve braised short ribs over mashed potatoes in a bowl.
