Grilling season is here, which calls for fun gatherings in the sun. One of the most foolproof recipes for your hangout is grilling burgers.
Jessica Holmes is a self-described burger “purist” because she only likes lettuce, tomatoes, pickles, ketchup and mustard. Now, she’s turning things up a notch by making her version of a hickory burger with barbecue sauce, bacon and onion straws.
“You’ve got to change it up sometimes!” she said.

Holmes recommends cooking bacon in the oven so that you don’t splatter grease all over your kitchen. Bonus tip: Cook the bacon on a wire wrack placed on a baking sheet. This way, the grease falls off the bacon and collects on the baking sheet.
Cook the burgers on an outdoor grill or with a cast-iron pan inside the kitchen. Just make sure the cast-iron pan is hot so that the burger patties get nice and brown.
If you have friends coming over, Holmes recommends placing all the toppings in separate bowls for them to build their own burgers exactly how they want.

Place bacon strips on a wire rack over a lined baking sheet and bake at 400°F for 15–20 minutes until crispy.
TIP: Using a rack allows grease to drip away for crispier bacon.

Season ground beef with salt, pepper and garlic powder, then form into four patties.
TIP: Avoid overworking the meat to keep burgers tender.

Coat onion slices lightly with flour and fry in hot oil until golden and crispy, then drain on paper towels and season with salt.

Cook burger patties on a grill or hot cast-iron pan over medium-high heat for about 3–4 minutes per side, adding cheese during the last minute.
TIP: Ensure the cooking surface is hot for a good sear.

Let the burgers rest briefly after cooking.
TIP: Resting keeps juices inside the patties.

Mix mayonnaise and barbecue sauce in a bowl until smooth.

Butter the buns and toast them until lightly golden.

Assemble burgers by spreading sauce on buns, then layering lettuce, patty, bacon, tomato, pickles, jalapeños and onion straws.
TIP: Set out toppings buffet-style for customizable burgers.
