For a fresh take on a summertime classic, try this simple and inexpensive dish: all-veggie fish-free ceviche.

On the surface, this vegan ceviche might look like salsa, but the recipe is a little more elevated. The star of the show is the hearts of palm, which has a similar flavor and texture to artichoke hearts. You can purchase pre-cut hearts of palm (commonly known as “palmitos”) at select grocery stores including Sprouts Farmers Market and Rancho Markets.

“This is a great option if you’re at a party, if you’re at a barbecue or something, and you want to have an option that’s inclusive for everybody,” Krystal Gates said, noting that fish is one of the top 10 most common allergens in the United States.

Vegan ceviche is simple to make, but can be time consuming. Look for pre-cut fresh produce or use a vegetable chopper to reduce the prep time. If you don’t like your ceviche spicy, omit the Serrano pepper. If you want to boost the umami flavor, add crumbled nori sheets.

“This is also a really great low calorie option if you’re trying to have a really hearty meal without all of the calories or all of the carbs,” Gates said.

Vegan Hearts of Palm Ceviche

  1. Combine the red onion, Old Bay seasoning, hearts of palm, cucumber, tomatoes, Serrano pepper and seafood seasoning in a large bowl.

    Tip TIP: Use pre-cut vegetables or a vegetable chopper to reduce prep time.

  2. Add the lime juice and season with salt and pepper to taste.

    Tip TIP: Start with the juice of one lime and add more as desired.

  3. Add the avocado if using and gently toss to combine.

    Tip TIP: Fold carefully to keep the avocado pieces intact.

  4. Serve immediately.

    Tip TIP: Enjoy with tortilla chips, on tostadas, or add crumbled nori for extra umami flavor.
