Herbed white bean dip is a healthy, easy and budget-friendly recipe that may help reduce the severity of PMOS (Polyendocrine Metabolic Ovarian Syndrome). Allen shared her struggles with infertility and how she would never be able to have kids. Little did she know that incorporating more whole foods and vegetables into her diet would completely change her life. Allen ended up having a surprise pregnancy and is now the mother of two beautiful daughters which she never thought was possible. “We just started incorporating more vegetables, more home cooking, more whole foods, and things started to shift, and suddenly I had a very surprise baby,” Allen said.

This herbed white bean dip is made with olive oil, which has healthy fats to keep blood sugar stable, as well as white beans, which have protein and fiber. You could serve the dip with crackers and pita, but Allen recommends serve it with vegetables, such as bell peppers and carrots.

Herbed White Bean Dip

  1. Combine the beans, olive oil, lemon juice, garlic, and herbs in a food processor.
  2. Blend until smooth, adding a tablespoon or two of water if needed to reach a dippable consistency.
  3. Season with salt and pepper.
  4. Serve with carrot sticks, cucumber, and bell pepper strips.

    Tip TIP: Vegetables are recommended over crackers or pita for serving.
