Utah Beef Council brings bursting bayou flavors to us. Get your creole seasoning out, and try this Cajun red beans and rice with beef sausage at home.

To make Creole seasoning, combine onion powder, garlic powder, oregano, Cayenne pepper, smoked paprika, black pepper and salt. If you love spice, use a spicy smoked beef sausage for this dish. Like most Cajun and Creole dishes, this recipe starts with the Holy Trinity, a mixture of onion, green pepper and celery.

This recipe calls for using a pressure cooker, which allows the dish to be done in 50 minutes, but this recipe can also be made without a pressure cooker – just use canned beans. While red kidney beans are recommended, feel free to substitute them with your favorite bean.

“It’s packed with protein, packed with fiber and packed with flavor. It’ll definitely keep you full, and even the kids will like this,” said Jacob Schmidt from the Utah Beef Council.

Cajun Red Beans and Rice

  1. Combine beans, onion, pepper, celery, Creole seasoning, garlic and bay leaf in a 6-quart electric pressure cooker.
  2. Pour broth over bean mixture and stir to combine.
  3. Close and lock pressure cooker lid.
  4. Use beef, stew or high-pressure setting on pressure cooker and program 50 minutes.
  5. Use the quick-release feature to release pressure and carefully remove the lid.
  6. Remove and discard the bay leaf.
  7. Remove 1/3 of the bean mixture into a medium bowl.
  8. Mash the bean mixture until thick and creamy and return it to the pressure cooker.
  9. Add the sausage.
  10. Close and lock pressure cooker lid and cook on high pressure for 10 minutes.
  11. Use the quick-release feature to release pressure, carefully remove the lid and stir.

    Tip TIP: This recipe was tested in an electric pressure cooker at high altitude. Cooking at an altitude of less than 3,000 feet may require slightly less cooking time. Refer to the manufacturer's instructions.

  12. Divide rice between four bowls.
  13. Top with sausage and bean mixture.
  14. Garnish with green onion and serve.
