This ground beef sausage is a great compliment to your favorite breakfast treats, and it’s so simple to make. Typically breakfast sausage is made with pork, but this beef version is a leaner alternative.

“You can utilize this ground beef and you can get that nice sausage flavor and cut down on the amount of fat that typically is found in sausage,” said Jacob Schmidt, director of marketing at the Utah Beef Council. “Beef is a great source of zinc, and when you’re trying to keep healthy and keep that immune system going, zinc is what you want.”

Schmidt seasons his sausage patties with sage, garlic powder, onion powder, salt and crushed red pepper, but you can switch up the spices however you like. When shaping the sausage patties, wear gloves or make sure to wash your hands well afterward for food safety.

This sausage works great as patties or crumbles. Serve patties with eggs and toast for a delicious and hearty breakfast, or crumble the sausage and use it in gravy for country-fried steak or biscuits and gravy.

  1. Combine the ground beef, sage, garlic powder, onion powder, salt and crushed red pepper in a large bowl, mixing lightly but thoroughly.

    Tip TIP: Avoid overmixing to maintain a tender texture.

  2. For sausage patties, divide the mixture into four portions and shape into 1/2-inch-thick patties.

    Tip TIP: Wear gloves or wash hands thoroughly after handling raw meat.

  3. Heat a large nonstick skillet over medium heat until hot. Add the patties and cook for 10 to 12 minutes, turning occasionally.

    Tip TIP: Cook until an instant-read thermometer inserted into the center registers 160°F.

  4. For sausage crumbles, cook the mixture in a skillet over medium heat for 8 to 10 minutes, breaking it into ½-inch crumbles and stirring occasionally.

    Tip TIP: Use crumbles in breakfast gravy, biscuits and gravy, or country-fried steak dishes.

  5. Serve hot.

    Tip TIP: Pairs well with eggs, toast and other breakfast favorites.
