Back-to-school season is here and we’re helping you pack a healthier lunch. Dietitian Kim Galeaz is sharing a salad sandwich recipe filled with flavor and nutrients.
“You make a salad that’s rich in vegetables, lean protein, and viola, you have a sandwich when you add some kind of bread to it,” she said.
This wasabi tuna salad sandwich is an easy, delicious and healthy way to incorporate more seafood into your diet. Galeaz modified Matthew McConaughey’s recipe by adding wasabi-flavored almonds and crushed ramen noodles for extra crunch.
“His recipe is incredibly nutrient rich and it is a dietitian’s dream recipe,” she said. “Why? Because it has peas and corn and two kinds of onions, and it has the lean protein from the tuna.”

Directions
Wasabi Dressing

Whisk together mayonnaise, wasabi paste, lemon juice, rice wine vinegar, honey, salt and pepper in a medium bowl.
TIP: Adjust the wasabi level to suit your preferred spice level.
Wasabi Tuna Salad

Place tuna, almonds, pickles, green onions, red onions, apple, corn and peas in a large bowl.

Pour the prepared wasabi dressing over the ingredients.

Toss lightly until evenly coated.
TIP: Taste and adjust seasonings or dressing as desired.

Serve immediately or refrigerate in a covered container for up to 4 days.
TIP: Makes about 5 1/2 cups of tuna salad.
Wasabi Tuna Salad Sandwich

Layer romaine lettuce on the bread, naan round or bun.

Top with a generous portion of the wasabi tuna salad.

Sprinkle with crispy jalapeños and/or crushed ramen noodles.
TIP: Use jalapeños for spice or ramen noodles for additional crunch.

Serve immediately.
