About this recipe
Chef Steve Forman from Thyme-N-Honey shares a pasta recipe that will make you want to eat bolognese for days.
A typical bolognese is a red sauce, but Forman elevates the traditional recipe with the addition of heavy cream. People can find the acidity of tomatoes a bit astringent, so heavy cream helps balance and mellow out the acidic tomatoes. Forman cautions against adding sugar as a way to lessen the acidity. Forman also recommends blooming paprika and onion powder in the ground meat mixture before deglazing with tomato for extra flavor.

This bolognese sauce also works well as a make-ahead recipe. Simply make the bolognese sauce the day before, keep it in the refrigerator and reheat it the day of serving. Cook the pasta and add it to the sauce the day of serving.
