Simply combine 85/15 or 93/7 ground beef with fresh parsley and cumin and form into meatballs. Place three cooked meatballs into a whole-wheat pita, naan or lavash and customize with your choice of chopped veggies and tzatziki sauce. It’s like taco night, but with Mediterranean flavors!
Jennifer Burns from the Utah Beef Council likes to dress chopped cucumbers with salt and vinegar, and she notes that while you can purchase tzatziki at the grocery store, you can also make your own by combining Greek yogurt, cucumber, dill, garlic, lemon juice and olive oil.
